Students prepping vegetablesLACC’s Dietetic Service Supervisor (DSS) Program prepares students for entry-level management opportunities in a food service department.

If you are planning a career in food services, the LACC Dietetic Service Supervisor Program, with Dietary Manager Exam eligibility, may be the pathway to your success.

Most Certified Dietary Managers work in healthcare settings such as nursing homes, long-term care facilities, senior living communities, and hospitals. In these settings the Certified Dietary Manger is involved in nutrition screening, documentation, and care planning for patients and residents.

Courses Available Fall 2019

FAM & CS 021: Nutrition

Learn the 6 classes of nutrients and their effects on health and wellness. UC and CSU Transferable.

FAM & CS 024: Food Preparation

Apply the principles of Food Science in the lab. Learn new cooking skills, improve current culinary skills and eat great food! UC and CSU Transferable.

FAM & CS 050: Sanitation & Safety

Learn the basic principles of sanitation and safety including the types of microorganisms that cause foodborne illness, foodborne infections, toxin-mediated infection, and intoxication.

FAM & CS 051: Food Production Mgmt

An introduction to institutional menu analysis for food requisitioning, food production planning and implementation. 

FAM & CS 055: Dietetic Education

Learn more about careers in dietetics and food service. Study the application of communication skills to training, counseling, and education.
